Cheese Pairing

Fromagerie Guilloteau

Saint Angel Triple Creme Brie

A cow's milk cheese that spreads like butter. Soft, decadent, mild earthy notes, hint of sweetness.

Filtering of milk solids, resulting in more calcium and protein, and the addition of cream come together and evolve into a luxurious spreadable cheese.

Somm's Notes

A classic sparkling for a party - bright and easy going, but quintessentially a Champagne.

Pinot Noir gives it that white and yellow fruit character, while Pinot Meunier add structure, and a touch of Chardonnay adds floral and mineral characteristics.

Vinification take place mostly in stainless steel vats (imparts freshness), and some time in oak to acquire the wonderful fullness (and nuttiness) that the oak barrels provide.

Charles de Cazanove Champagne is a perfect touch of elegance for a crowd.
